    Peppermint Slice – Gluten Free, Low Carb, No Added Sugar

    Peppermint slice is an old favourite of mine. Biscuit base, peppermint cream centre with chocolate top. For those that don’t want to miss out on this amazing tasting slice can still enjoy it without the high amount of sugar and gluten that comes with the original variety. This peppermint slice alternative contains sunflower seeds and dates for the base, coconut milk and avocado for the peppermint cream centre and dark chocolate for the top.  Don’t let the ingredients fool you.  This tastes just as good as the real thing.

     

    Ingredients:
    1 270ml can of coconut milk
    1/2 cup of sunflower seed flour or almond meal
    2 tbs of flaxseed meal
    2 eggs
    1/4 cup of cacoa powder
    1 handful of spinach leaves
    1 avocado
    9 squares of dark chocolate (70% or higher)
    1 cup of dates blended
    2 tbs of coconut oil
    1/4 cup of desiccated coconut
    Approx 8 tabs of stevia
    Cinnamon
    2-3 tsp of natural peppermint essence
    2-3 tsp of natural vanilla essence

    Method for biscuit base:

    Pre-heat oven to 180dg
    Whisk two eggs in a bowl
    Blend sunflower seeds into a powder and add to bowl or add almond meal to bowl
    Chop dates and blend in a high speed blender and add to bowl
    Add desiccated coconut, cacoa powder and flaxseed meal to bowl along with 2-3 tabs of stevia, 1 tsp of vanilla essence and a good shake of cinnamon
    Stir well. If mixture is too bitter, add more stevia, vanilla essence or cinnamon.
    Place in a shallow baking tray lined with baking paper
    Spread mixture out evenly so mixture is flat
    Place in oven for 10-15 minutes then remove

    Method for filling:
    While biscuit base is cooking you can prepare the filling.
    Spoon solid portion of coconut milk into a bowl along with avocado flesh
    Finely chop spinach and add to mixture
    Add tsp of peppermint and vanilla essence
    Add 2-3 tabs of stevia
    Place ingredients in a high speed blender and blend until smooth
    Taste test, add more peppermint/vanilla essence or stevia until it reaches the desired flavour
    Pour mixture on top of the biscuit base and place in the freezer for approx 15 minutes

    Method for chocolate top:
    Just before you remove slice from freezer, place dark chocolate and coconut oil in a bowl and place in microwave for approx 1 minute.
    Add 1-2 stevia tabs and stir well
    Stir chocolate mixture well
    Remove slice from freezer and pour chocolate mixture on top and spread out evenly across the mixture
    Place in freezer until chocolate top has hardened then place in fridge.
    Note: Be careful when cutting into slices as the chocolate may crack.
