    Low Carb, Gluten Free Pizza Base

    This low carb, gluten free pizza base is made from a combination of pumpkin seeds blended into flour and desiccated coconut blended into a powder, combined with egg, herbs and coconut oil.

    Serves: 1 pizza
    Preparation time: 10 minutes
    Cooking time: 25 minutes

    Ingredients for pizza base:
    1 egg
    1 cup of pumpkin seeds blended into powder
    1/2 cup of desiccated coconut blended into flour
    1 tbs of coconut oil
    Dried mixed herbs

    Ingredients for topping:

    Home made BBQ sauce (alternative to tomato paste)
    Spinach leaves
    Marinated artichoke hearts
    Beef and pork mince
    Sheeps feta
    Olives

    This is what I used – you can add/subtract any pizza topping you like

    Method:
    Pre-heat oven to 180dg
    Whisk one egg in a bowl
    Blend pumpkin seeds into powder and add to bowl
    blend desiccated coconut into a fine powder and add to bowl
    Melt 1tbs of coconut oil and add to bowl
    Add mixed herbs and stir well
    Mixture should turn into a doughy type texture
    Remove from bowl and need into a flat circle
    Line a flat pizza tray with baking paper and place base onto tray then into the oven

    While base is baking, prepare toppings of your choice
    After 20 minutes, remove from oven – base should be hard and crispy
    Add toppings and place switch oven to grill for 5 minutes
