    Goji berry protein balls

    These goji berry balls are high in protein, contain no gluten or added sugar. They require a bit more  time to prepare as the mixture needs to be cooled to make it easier to shape them and then cooled again before serving. They are well worth the wait though. Make these in advance before serving.

    Ingredients:
    1 cup of sunflower seeds
    2 tbs crushed flaxseeds
    3 good pinches of desiccated coconut
    60g of chocolate whey protein powder
    1/2 cup of goji berries
    Small handful of dates, chopped
    2 tsp of raw cocoa powder
    4 squares of dark chocolate (70% or better) shaved
    1 tbs of coconut oil
    2 eggs

    Method:
    – Blend sunflower seeds, flaxseeds and goji berries
    – Chop dates
    – Shave dark chocolate (this can be done with a large knife)
    – Add remainder of dry mixture to a bowl
    – Melt coconut oil in a pan (this will take a few seconds), then add to bowl
    – Add eggs to bowl and stir well
    – Place mixture in freezer for around 20 minutes so that mixture can be moulded
    – Once mixture slightly harder, mould into balls and then place back in freezer for approx 1hr.
