    Corn and Zucchini Fritters

    These corn and zucchini fritters are quick and easy to make. Most fritters are made with normal flour which contains gluten. These fritters are made with besan flour which is made from chick peas

    Serves: 4-6
    Preparation time: 5 minutes
    Cooking time: 10 minutes

    Ingredients:
    1 large can of corn kernels
    1 zucchini
    2 eggs
    1 cup of besan flour
    1 red onion
    Salt and pepper
    Olive oil

    Method:
    Grate zucchini into a bowl and transfer contents into a clean tea towel
    Wrap zucchini and wring the excess liquid from the zucchini
    Crack two eggs into a bowl and whisk
    Chop onion and add to bowl with zucchini, corn kernels, besan flour, salt and pepper
    Stir well
    Spoon 2 tbs of mixture at a time into a frying pan with olive oil
    Flip when underside cooked – fritters should lift straight off the pan

    Can be served with avocado, bacon or smoked salmon.
