    Vanilla Slice: Gluten, Sugar and Dairy Free

    One of my favourite desserts of all time. I don’t often have them but when I do they must be exceptional. Nothing disappoints me more than having a poorly made, tasteless vanilla slice. This vanilla slice is made without dairy or sugar. The base also is made without gluten.

    Ingredients:
    2 240ml cans of coconut milk
    2 handfuls of dates
    2 whole eggs
    6 egg yolks
    2 cups of desiccated coconut
    3 tbs of coconut oil
    6 tabs of stevia
    1 tsp of raw cacoa powder
    2 tbs of flaxseed meal
    1-2 tsp of vanilla essence
    1-2 tsp of cinnamon
    1 lemon zest

    Method:
    Create the base first
    Pre-heat oven to 180dg
    Line a baking tray with baking paper
    Whisk two eggs in a bowl
    Chop dates and blend in a high speed blender until dates become small chunks
    Add dates into bowl with desiccated coconut and flaxseed meal and stir well
    Pour into baking tray and spread out finely
    Place in oven and bake for around 15-20 minutes.
    Check on crust to make sure it doesn’t burn

    Method for Filling:
    Separate 6 egg yolks in a bowl
    Add 3 tabs of stevia to yolks and beat with a beater until yolks are light in colour
    Grate the zest of one lemon and add to the egg yolk
    Add the hardened cream of the coconut only and not the water and beat with beater until well mixed together


     

    Add vanilla essence and cinnamon to taste
    Pour mixture into the baking tray on top of the crust

     

    Place in oven for around 20-25 minutes at around 160dg
    Once the top turns light brown, check with a knife, if knife comes out clean, custard is ready

    Allow to cool once cooked then place in the fridge until cold
    Once the custard is cold, cut the slice in half and place one half on top of the other

    Melt coconut oil into a small container and add 1 tsp of stevia and stir well
    Using a spoon, coat the top of the slice then place into the fridge or freezer for a couple of minutes to allow the icing to set. This will only take a couple of minutes. Repeat this process approx 3-4 times. A white coating of icing should be formed.

    Leave a couple of tbs of coconut oil, add 1 tsp of raw cacoa powder and 1 stevia tab
    Stir well then add add to top of icing.
