    Spicy Chicken Burgers

    These chicken burgers are simple to make,full of flavour and come with a bit of a kick. These can be bbq’d or pan fried. The chicken burgers can be served as an entrée or as part of a main meal with a serve of vegetables.

    Serves:
    Approx 10 burgers
    Prep time: 10 minutes

    Ingredients
    500g of good quality chicken mince
    1 red chilli
    1 egg yolk
    2 tbs olive oil
    2 tsp curry powder
    Ginger, grated, approx 5cm
    1 clove of garlic
    Juice of half a lemon
    Salt and Pepper

    Method:
    In a bowl beat one egg yolk
    Add lemon juice and olive oil to bowl
    Slice red chilli, remove seeds if you are sensitive to heat and finely chop and add to bowl
    Grate ginger and crush garlic and add to bowl with curry powder and salt and pepper
    Add chicken mince to bowl and with hands mix ingredients well together
    Take out portions of chicken mixture roughly the size of the palm of your hand, roll into a ball and flatten out
    Add olive oil to a pan and cook burgers on medium heat so as not to burn the burgers
    Serve with mixed greens. Try this recipe for amazing greens.
