    Slow Cooked Lamb Shanks

    Using the slow cooker is one of my favourite methods for cooking in winter. Simply prepare, set and leave. Lamb shanks are no exception. These lamb shanks are so tender when slow cooked the meat literally falls off the bone.

    Serves: 2 (multiply ingredients for additional serves)
    Prep time: 10 minutes
    Cooking time: 8 hours

    Ingredients:
    2 lamb shanks
    2 carrots
    1 sweet potato
    2 celery sticks
    1 brown onion
    2 cloves of garlic
    2 tbs of seeded mustard
    2 tbs of tomato paste
    Salt and pepper
    Olive oil

    Method:
    Brown onion and garlic on low heat in a saucepan or cooking pot with olive oil, salt and pepper
    Add lamb shanks and allow to brown
    While onion and lamb shanks are browning, chop vegetables and add to slow cooker
    When onion and lamb shanks have browned, add to slow cooker

    Add tomato paste and seeded mushrooms to slow cooker
    Cook on high for first hour then reduce to low for remaining time
    Cook for a total of 8 hours
