    Slow Cooked Lamb Rack

    If you want a simple meal that you can simply set and leave to cook and then have it ready when you get home, this is it. Slow cooked lamb rack. Straight forward, low prep time and can make multiple serves if required. This lamb rack is so tender when slow cooked, the meat literally falls of the bone.

    Serves: 2
    Preparation time: 10 minutes
    Slow Cooking time: 8hrs

    Ingredients:
    2 racks of lamb or more for larger serves
    3 rashers of bacon – rind removed
    10 Brussels sprouts
    1/2 large sweet potato
    2 carrots
    1 brown onion
    2 cloves of garlic
    Olive oil
    Salt, pepper and dried herbs

    Method:
    Dice brown onion and garlic and place in a large saucepan or cooking pot with olive oil
    Add racks of lamb to saucepan (fat side down) and allow to brown
    While lamb is browning in pan, peel and chop sweet potato and carrots
    Add all vegetables to slow cooker
    Once lamb has browned, add to slow cooker with onion and garlic
    Cook on high for first 1-2 hours then return to low heat
    Cook in total for around 8 hours
