    Salmon with asparagus and sweet potato

    Serves 2
    Time: 15 minutes

    2 salmon fillets
    1 bunch of baby asparagus
    1 large sweet potato,peeled and chopped into cubes
    Olive oil
    1 tablespoon of soy sauce
    1 teaspoon of fish sauce
    1 tablespoon of honey

    Place sweet potato in a saucepan with water and bring to the boil.
    Cook till medium cooked. Strain and let cool. Once cooled put in a bowl and add 3 tablespoons of olive oil and salt to taste.
    Then, add 1 tablespoon of olive oil to a fry pan and sauté asparagus.
    After 1 minute add 1 tablespoon of honey. Continue to saute till medium cooked.
    Lastly, place 1 tablespoon of olive oil in a frypan and then place salmon fillets in the frypan.
    Add 1 tablespoon of soy sauce and 1 teaspoon of fish sauce. Once cooked place on plate with other vegetables.
