    Portuguese Tarts: Gluten, Sugar, Butter Free

    I see Portuguese tarts in just about every cafe and cake shop I walk past. These Portuguese tarts are simple to make and contain no gluten, sugar or butter.

    Ingredients for custard:
    6 egg yolks
    500g of ricotta cheese
    1 tsp of vanilla essence
    2-4 stevia tabs
    1 tsp of cinnamon
    1 lemon rind

    Ingredients for base:
    2 whole eggs
    2 handfuls of dates
    2 handfuls of desiccated coconut

    Method:
    Create the base first
    Pre-heat oven to 180dg
    Crack two eggs into a bowl and whisk
    Chop dates and then blend in a high speed blender
    Mix ingredients together well
    Place 1 tbs of mixture into bottom of a patty pan and pat down evenly
    Bake in oven for approximately 15 minutes

    While base is baking, make the custard mixture

    Separate 6 egg yolks into a bowl
    Add 2 stevia tabs and blend until yolks are light in colour
    Using a zester, grate the rind of one lemon into the egg mixture
    Add vanilla essence and ricotta and mix for approximately 30 seconds with beaters
    Pour mixture into patty pans on top of crust and bake in oven for approximately 15-20 minutes
    Once top of custard is a light brown colour, the tarts should be ready
    Dust with cinnamon before serving
