    Not Peanut Butter Muffins: Nut Free, Gluten Free, No added Sugar

    Tahini is perfect for those like myself who have an allergy to nuts however still want to enjoy a nutty flavour. These muffins taste like they have been made with peanut butter however contain no nuts, gluten or sugar.

    Ingredients:
    2 eggs
    3 tbs of Tahini
    2 handfuls of dates
    1 banana
    2 cups of desiccated coconut – blended into a fine powder
    4 squares of dark chocolate (70% or better)
    1 tbs of coconut oil
    2 tsp of baking soda
    2 tbs of flaxseed meal
    1/2 cup of hot water
    2 stevia tabs

    Method:
    Pre-heat oven to 180dg
    Whisk two eggs in a bowl
    Mash one banana in another bowl
    Chop dates and add to blender with hot water
    Blend coconut into a fine powder
    Blend until it becomes a paste like texture
    Add all ingredients plus one stevia tab into one bowl and stir well
    Spoon 2 tbs into each patty pan
    Bake for 20 minutes
    Allow to cool in a wire rack once removed
    If you are in a hurry, store in the freezer for around 10 minutes
    While muffins are cooling, melt dark chocolate and coconut oil in a glass in microwave for approximately 1 minute
    Once muffins are cool remove, drizzle melted chocolate onto each muffin
    Place back in freezer for 5-10 minutes to allow chocolate to set
