    Mini Doughnuts: Gluten Free, No added Sugar or Butter

    Who doesn’t love hot jam doughnuts on a cold winters day. Covered with cinnamon and sugar and filled with jam. Yum. For these jam doughnuts I have replaced the flour with finely blended desiccated coconut which eliminates the high carb and gluten content. The jam is made from fresh strawberries and sweetened with stevia. The cream is made from ricotta.

    Ingredients for doughnuts:
    2 eggs
    2 cups of desiccated coconut
    5 dates
    2 stevia tabs
    1 tsp baking soda
    1 tsp baking powder
    2 tbs of coconut oil
    1 tsp of vanilla essence
    1-2 tsp of cinnamon
    1-2 tsp of nutmeg
    1 dash of hot water

    The ingredients for jam and ricotta cream is enough for two serves of doughnuts. If don’t want left over jam and ricotta, halve the below ingredients

    Ingredients for strawberry jam:

    1 punnet of strawberries or any other berries
    2 stevia tabs

    Ingredients for ricotta cream:
    1 250g tub of ricotta cheese
    2 egg yolks
    2 egg whites
    1-2 tsp of vanilla essence
    3-4 stevia tabs

    Method for doughnuts
    Pre-heat oven to 180dg
    Crack two eggs into a bowl and whisk
    Blend two cups of desiccated coconut into a fine powder and add to bowl
    Melt 2 tbs of coconut oil in microwave and pour into bowl
    Finely chop 5 dates and add to blender with a dash of hot water
    Blend until dates become a fine paste and add to bowl
    Add remaining ingredients and stir well

    Add patty pans to a muffin tray
    Spoon one tbs of doughnut mixture and roll into a ball and add to each patty pan
    You may need an additional muffin tray or patty pans for excess mixture



    Bake for 20 minutes
    Once removed, allow to cool



    Method for ricotta cream
    Crack two eggs and separate the yolks and whites. Place the yolks in one bowl and whites in another bowl.
    Add two stevia tabs to the egg yolks and with a high speed beater, beat until the yolks are a thick texture and pale in colour. Then add the yolks to the ricotta
    Add vanilla essence to the ricotta and beat for 30 seconds
    Using the high speed beater, beat the egg whites until they rise and are fluffy
    Add the egg whites to the ricotta mixture and fold through with a spatula
    Check if ricotta mixture is sweet enough, if not add extra stevia or vanilla essence

    Method for strawberry jam
    Chop strawberries then place in a blender
    Blend until the consistency is half liquid and half strawberry chunks
    Pour strawberries into a saucepan on low heat
    Add 2 stevia tabs to sweeten
    Keep stirring jam while it is heating
    Once jam has started to bubble, pour into a bowl or glass
