    Low carb smoked salmon wrap

    Serves: 1-2

    Cooking time 10 mins

    Ingredients:

    3 whole eggs
    1 handful of spinach leaves
    Avocado to spread
    Chopped tomatoes
    Olive oil

    Method:
    Pre-set oven to grill setting
    Whisk eggs in a bowl
    Add olive oil to pan
    Pour egg into pan and allow bottom of egg to cook then place under grill. Don’t allow egg to cook too hard otherwise it will crack
    Remove from grill after about 5 minutes
    Remove from pan, spread avocado onto omelette and add smoked salmon, spinach leaves and chopped tomato
    Gently roll omelette and cut I half.
