    Fish in a Bag: Baked Salmon Fillet With Mixed Vegetables

    This is a quick and easy way to bake fish or chicken with vegetables. All done in 20 minutes.

    Serves: 2
    Preparation time: 5 minutes
    Cooking time: 20 minutes

    Ingredients:

    2 fresh salmon steaks
    1 lemon
    1 handful of button mushrooms
    1 red capsicum
    1 zucchini
    1 bunch of bok choy
    1 bunch of broccolini or broccoli
    2 small bunches of oregano
    Salt and pepper
    Olive oil

    You’ll also need
    Baking paper
    Baking tray
    Aluminium foil

    Method
    Pre-heat oven to 180
    Pre-chop vegetables and lemon
    Take a large piece of foil and double it over and lay on baking tray
    Cover the foil with baking paper
    Place chopped vegetables and lemon on baking paper then place salmon fillets on top of vegetables
    Fold the foil up covering the salmon and vegetables like a parcel
    Place in baking tray and bake for approximately 20 minutes
