    Easy Meat Balls

    I’ve normally only ever made meat balls with beef mince, however I have since learnt if you add pork mince as well it takes the taste of the meat balls to a whole new level. I have my method for the tomato sauce but fell free to add your own additions if you prefer.

    Serves: Approximately 6
    Preparation time: 10 mins
    Cooking time: 45 mins

    Ingredients:
    400g of good quality mince pork
    400g of good quality mince beef
    1 egg
    2 tins of dice/crushed tomatoes
    2 x tablespoons of tomato paste
    2 pieces of roasted capsicum
    1 handful of spinach
    10 button mushrooms
    1 brown onion
    2 cloves of garlic
    Dried herbs
    Olive oil
    Salt and pepper
    Parmesan cheese

    Method:
    Pre heat oven to 180
    Crack 1 egg into a large bowl and whisk
    Add pork and beef mince into bowl, add salt, pepper, dried herbs and mix well with hands
    Line a large baking tray with baking paper
    Roll portions of mince into balls and place on tray
    Place in oven for 15 minutes
    While meat balls are in oven you can prepare the tomato sauce

    Chop onion, garlic, mushrooms and capsicum and place into a saucepan with salt, pepper and olive oil
    While ingredients are sautéing tear up spinach and add to pot as well
    Add tomato paste, and crushed tomatoes to saucepan and simmer on high

    Take meat balls from oven and add to saucepan
    Once sauce starts to bubble, return to low heat with saucepan lid half on and allow to simmer for approximately 30 mins

    Serve with Parmesan cheese
