I could eat ice cream all year round. If only there was a way you could still eat ice cream and not worry about the huge amounts of sugar, chocolate, lactose, anti-freeze, artificial sweeteners, stabilisers, high fructose corn suryp and god only knows what else they put in ice cream to make it taste and look so good.
We all know that ice cream isn’t one of the best weight loss foods however I have made an exception. This ice cream is dairy free, contains no added sugar and is flavoured from raw cacao powder powder, stevia and real coconut milk. What else is a bonus is that you won’t require an ice cream making machine to create this.
2 cans of coconut milk
4 squares of dark chocolate (70% or better)
1 cup of blended dates
2 tsp of vanilla extract
2 egg whites
1/3 cup of raw cacao powder
2 tabs of stevia
Spoon out solidified coconut milk from can into a bowl.
Chop dates and then blend in a high speed blender until they a fine consistency
In a separate bowl whisk 2 egg whites until they are fluffy
Combine all ingredients except dark chocolate into one bowl and stir
Place half ingredients into a blender and blend until as smooth as possible then pour into storage container to freeze
Repeat blending process with remaining mixture and add to storage container
Chop dark chocolate squares and add to mixture and stir in
Place in freezer for a few hours to solidify
Note: Eggs can be removed for allergy reasons
Remove from freezer to thaw for around 5 minutes prior to serving
