    Crispy Skin Salmon Salad

    INGREDIENTS

    2 serves
    • 2 x fresh salmon fillets with skin on
    • 2 x handfuls of rocket
    • 2 x handfuls of spinach
    • 1 x handful of cherry tomatoes
    • 6 x balls of boconcini mozzarella cheese
    • 1 x avocado
    • 1 x handful of olives
    • 1 x dash of olive oil
    • FOR DRESSING

    • Dash of balsamic vinegar
    • Dash of fish sauce
    • 1 x tsp of honey

    METHOD

    • Add olive oil into a pan
    • Add salmon fillets skin down and cook on low heat
    • While salmon fillets are cooking prepare salad
    • Place all ingredients into a bowl and mix well
    • When fillets are cooked halfway through, turn onto one side and cook for approximately
    • one minute each side Once cooked, slice fillets and place on top of salad
    • For dressing, mix all ingredients well into a bowl and then pour over salad.
