    No Added Sugar, Cookies and Cream Ice Cream

    I’ve been in an ice cream making mood over the last few days. Cookies and cream ice cream is one of my favourites. This no added sugar ice cream which is made from coconut milk, egg whites and sweetened with stevia contains no added sugar, preservatives or artificial sweeteners.

    The cookies are made from sunflower flour or you could substitute the sunflower flour with almond meal. The cookies also contain whey protein powder, cacoa and are also sweetened with stevia.

    You’ll need to allow a couple of hours for the mixture to freeze and allow about 30 minutes for the mixture to soften before serving.

    This no added sugar cookies and cream ice cream is a perfect dessert for those that are wanting to lose weight and still want to enjoy ice cream and not worry about the huge sugar and dairy hit that you’ll receive from the traditional variety. The good fats contained in the coconut will help to slow the release of sugar into the blood stream which helps to reduce fat storage after a meal.

    Ingredients for Cookies:
    Will make approx 6 chocolate cookies
    1/2 cup of Sunflower flour or almond meal
    1/2 cup of desiccated coconut
    3 eggs
    1/3 cup of coconut oil
    4 tabs of stevia
    1/3 cup of cacoa powder
    30g of chocolate whey protein powder
    Depending on your taste you may want to add more whey protein or stevia
    1 tsp of vanilla essence

    Method:
    Pre-heat oven to 180
    Whisk eggs in a bowl
    Blend sunflower seeds into flour if you aren’t using almond meal
    Add all remaining ingredients into a bowl and stir well
    Line a baking tray with baking paper
    Spoon approx 2 tbs of mixture onto the tray for each cookie
    Place in oven for around 10-15 minutes
    Allow to cool before crumbling into ice cream mixture

    Ice cream mixture

    Ingredients:
    2 x 240ml cans of coconut milk (use only the solid part coconut milk)
    2 x egg whites
    1 tsp vanilla essence
    2 tabs of stevia

    Method:
    Whisk egg whites in a bowl until they are fluffy
    Add coconut milk, vanilla essence and stevia to the bowl and mix well
    Taste test, if not sweet enough add more stevia or vanilla essence
    Crumble cookies into mixture
    Pour mixture into a freezer storage container and place in freezer
    Mixture will need around 2-3 hours to freeze
    Allow about 30 minutes to defrost before serving
    Serve with strawberry and grated dark chocolate
