    Broccoli and Corn Fritters

    Broccoli fritters are a tasty way to increase your greens intake. Not all people are fans of broccoli at the best of times however combining them into a fritter can helps to make broccoli a lot more appetising. These broccoli fritters are made with besan flower which is made from chick peas instead of regular flour.

    Serves: 4-6
    Preparation time: 5 minutes
    Cooking time: 10 minutes

    Ingredients:
    1 head of broccoli
    1 large can of corn kernels
    2 eggs
    1 cup of besan flour
    1 red or brown onion
    Salt and pepper
    Olive oil

    Method:

    Remove broccoli head from main stalk
    Cut the stalks of each head and place all broccoli heads into a blender
    Pulse until the broccoli is finely chopped up
    Crack two eggs into a bowl and whisk
    Chop onion and add to bowl with broccoli, corn kernels, besan flour, salt and pepper
    Stir well
    Spoon 2 tbs of mixture at a time into a frying pan with olive oil
    Flip when underside cooked – fritters should lift straight off the pan

    Can be served with avocado, bacon or smoked salmon.
