    Apple and Coconut Pancakes – High Protein, Gluten and Sugar Free

    For those that are after a gluten and sugar free option for pancakes that can be eaten for breakfast or as a dessert, this is it. These apple and coconut pancakes are high in protein and are packed full of nutrients. The mixture is also flavoured with cinnamon and ginger powder. The ingredients makes around 3-4 decent sized pancakes which caters for two serves. Preparation time is around 10 minutes as is cooking time.

    Perfect on a warm summers night, these beef skewers can either be BBQ’d or pan fried and are finished off with a home- made BBQ sauce. The greens salad is also dressed with a home-made salad dressing.

    INGREDIENTS

    Ingredients for Skewers

    • 1 cup of desiccated coconut blended into powder
    • 3 eggs whisked
    • 1 granny smith apple grated
    • ½ ripe banana
    • 1 tsp of ginger powder
    • 1 tsp of cinnamon
    • 1 stevia tab
    • 1 tbs coconut oil for frying

    METHOD

    • Whisk eggs in a bowl
    • Grate apple into a clean tea towel; wring out all the excess liquid from the grated apples
    • Mash half a ripe banana in a separate bowl
    • Blend desiccated coconut into a fine powder
    • Combine all ingredients including cinnamon and ginger into one bowl and stir well
    • Add coconut oil to pan
    • Spoon out small portions into a pan
    • Cook on low heat for around 2 minutes. The underside will be cooked when the pancake no longer
